Ingredients (3 servings):

  • 1 cup (200 ml) coconut milk or sour cream (leave in the refrigerator overnight)
  • 3 cups frozen strawberries

Preparation:

  • Beat in a blender or food processor until you get the desired consistency;
  • Serve.

Tip: serve with strawberries and grated coconut sprinkled on top

Low-Carb Ice Cream Recipe # 2 – Traditional Chocolate Popsicle

Carbohydrate quantity per serving: 2 g

Ingredients (3 servings):

  • 2 cups coconut milk
  • ½ cup water
  • 3 tablespoons cocoa powder
  • ¼ cup of erythritol sweetener
  • ½ teaspoon vanilla extract

Preparation:

  • Beat all the ingredients in a blender;
  • Pour the mixture into small popsicles;
  • Take to the freezer for 6-8 hours;
  • Pour hot water into the molds to remove popsicles.

  • 1 cup peanut butter
  • 2 teaspoons vanilla essence
  • ¼ teaspoon of xanthan gum
  • 1 1/3 cup of sour cream
  • 1 cup almond milk (not sweetened)
  • 1 pinch of salt
  • 1/4 cup xylitol

Preparation:

  • Beat the ingredients in the blender until a homogeneous mixture is obtained;
  • Take the mixture to an ice cream machine, following the manufacturer’s instructions;
  • If you do not use the machine, take the mixture to the freezer for 3 hours, stirring every 20 minutes.

Low-Carb Ice Cream Recipe # 4 – Ketosis Coconut Ice Cream

Preparation time: 15 minutes 
Standby time: 3 hours

Carbohydrate quantity per serving: 1 g

Ingredients (4 servings):

  • 1 cup and a half (300 ml) coconut milk
  • ¼ cup (100 ml) cream
  • 5 tablespoons (50 g) grated coconut
  • 5 tablespoons (90 g) butter or coconut oil
  • ¼ cup (50 g) of crushed pecans
  • 2 tablespoons (30 g) xylitol
  • 1 pinch of xanthan gum (optional)

Preparation:

  • Heat the butter in a frying pan over low heat and stir until it begins to
  • to melt;
  • When the butter is turning golden brown, add the cream, xylitol and pecans, and stir well;
  • Add coconut milk, frying pan mixture and xanthan gum to a bowl.
  • Use a mixer to mix everything well;
  • Put this mixture in an ice cream maker and use it according to the instructions for use;
  • If you do not use the machine, take the mixture to the freezer for 3 hours, stirring every 20 minutes.

Low-Carb Ice Cream Recipe # 5 – Red Fruit Popsicle

Preparation time: 15 minutes 
Standby time: 3 hours

Carbohydrate quantity per serving: 5 g

Ingredients (6 servings):

  • 1.5 cup of red berries of your choice chopped (strawberries, raspberries, blueberries, blackberries)
  • 3 cups coconut milk or sour cream
  • 1 tablespoon vanilla extract
  • 1 tablespoon erythritol

Preparation:

  • Put some of the red fruits in the popsicles;
  • Beat the rest of the fruit with the other ingredients in a processor until a homogeneous mixture is obtained;
  • Fill the molds with the mixture and take to the freezer 3 hours;
  • Pour hot water into the molds to remove popsicles.
